Here chicky chicky...

I've been sooo good this week, making every meal just in time for Joel when he gets home from work. Housewifey? Yep. But I'm proud of myself because after watching three kids all day, last thing I want to think about is making dinner. Unfortunately, we've been kinda bored of the same-old same-old. And our favorite go-to meal almost always includes chicken. (I've become a pro at making chicken noodle soup, especially this time of year.) So, I looked at some new recipes on-line and in magazines. I did a couple crock pot meals, which makes it easier on me by dinner time. One of them Joel and I both loved was this lemon garlic pasta... with chicken. I found a recipe on-line but I did change it up a bit and added some chicken. My husband is a growing man in need of protein.

The link to the recipe can be found here. I put the chicken in the crock pot and put it on low for about 6 hours. I added lemon juice, salt, pepper, a little this and that, and some water at the bottom of the pot. Oh my, it was soo tender and juicy. Fell apart picking it up. As for the pasta, I didn't have spaghetti so I used fettuccine. Lemon, garlic, parmesan, basil, and I added onion. Pretty much followed the recipe. Then for dessert, we had peanut butter chocolate chip cookies that me and one of the kids I babysit made earlier in the day. So, good evening for us!
